Mexican Street Corn for One

Ingredients
  

  • 1 ear of corn husked
  • 1 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp cotija or feta cheese crumbled
  • 1/4 tsp chili powder
  • 1/2 lime cut into wedges
  • salt to taste
  • 1/4 tsp smoked paprika (optional)
  • 1 tsp chopped cilantro (optional)

Instructions
 

  • Preheat your grill or grill pan over medium-high heat.
  • Place the corn on the grill and cook, turning occasionally, until the kernels are charred in spots and fully cooked (approximately 7-10 minutes).
  • In a small bowl, mix the mayonnaise and sour cream.
  • Brush the grilled corn with the mayonnaise and sour cream mixture.
  • Sprinkle the cheese over the corn. Make sure it sticks to the mayo mixture.
  • Dust corn with chili powder and smoked paprika.
  • Squeeze lime wedge over the corn for added flavor.
  • Garnish with chopped cilantro and add a pinch of salt.
